Thanksgiving Series: Green Beans & Radish with Parsley Pesto
November 20, 2017Instead of serving a green bean casserole for this Thanksgiving, how about serving the delicious dish of green beans and radish with a parsley pesto? It takes just a few ingredients and it's super quick to make it too! Take a look:
Ingredients:
2 lbs. green beans, trimmed4 radishes, thinly sliced1 bunch of parsley
1 clove garlic
1/3 cup pine nuts
1/4 cup olive oil
Salt and black pepper
Directions:
Fill a pan with 2 inches water and bring to a simmer. Add green beans and let cook for about 5-6 minutes, beans should remain bright green with a snap to them. Drain beans, add them to a bowl with cold water. Once beans are cooled, drain again. Place bean in a serving platter with sliced radishes. In a food processor, add the parsley, garlic and pine nuts. Pulse and slowing start pouring the olive oil, until the pesto forms. Season with salt and black pepper. Add pesto to the greens and radishes. Serve and enjoy!
