These roasted carrots and garlic carrot tops are absolutely delicious! They’re the perfect side dish to serve for Thanksgiving dinner, I love how quickly it can be made! Take a look:
Ingredients:
2 lbs. carrots with green tops
2 tablespoons olive oil
Cumin
Paprika
Salt and black pepper
3 cloves garlic minced
Directions:
Pre heat oven to 400F degrees. Cut the green tops from carrots and reserve. Peel the carrots and cut them lengthwise. Place them in a baked sheet, drizzle 1 tablespoon of olive and season with cumin, paprika, salt and black pepper. Toss really well. Bake for about 25-30 minutes until carrots are tender. Remove from oven, set it aside. Meanwhile, remove the large stems for the carrot green tops. In a skillet, heat the remaining olive oil over high heat. Add the minced garlic and sauté until garlic is golden in color. Add the greens and sauté quickly. Remove from heat. To serve, arrange roasted carrots in a serving dish and place the sautéed carrot green tops over the carrots. Enjoy!
