Thanksgiving Series: Butternut Squash Salad with Orange & Mustard Dressing
November 08, 2021Every year for Thanksgiving I try to create new recipes to serve during the holiday. This butternut squash salad is simple but delicious, the orange and mustard dressing makes all the flavors come together. Take a look:
1 small butternut squash (peeled, seeds removed and cut into small pieces)
1 red onion, peeled and diced
1 tablespoon olive oil
Salt and black pepper
Directions:
Preheat oven to 380F degrees. In a baking dish, add butternut squash and onion, season with salt and black pepper. Drizzle olive oil and toss really well. Bake for about 30-40 minutes until tender. Remove from oven and let it cook slightly.
Ingredients for dressing:
Juice from a small orange
2 tablespoons olive oil
1/2 teaspoon stone ground mustard
Salt and black pepper
Directions:
In a small bowl, whisk together all the ingredients. Reserve dressing.
To serve, arrange in a serving dish mix greens of your choice. Add the cooked butternut squash and onion. Drizzle the dressing over the top. Enjoy!
